<span style="font-family: Georgia, Times New Roman, serif;">酿豆腐我觉得是客家人的菜吧,这道菜也是我的家传菜.. 以前在家里妈妈都常煮这道菜,尤其是过年. 我们家过年一定会有这道酿豆腐,然后就拿菜包着酿豆腐一起吃. 我其实不懂那个菜叫什么名字,问了姐姐,说是叫"Mak Choy".. 妈妈说现在很难找到这种菜,就用高丽菜来代替. 姐姐告诉我爸妈到新加坡时,她一定会做这道菜给他们吃, 并答应我会帮我拍下那个菜的样子. *新加坡好像有这个菜*</span><br />

排骨的老板也超好人的 (排骨在餐馆做part-time),每次回家一定带一些东西给我吃. 有猪脚醋、猪肝、面条等等. (老板是特地煮的,也没有收钱. 对了,老板是我教会的uncle)<br />

我问排骨要吃怎样的面包,他说他不喜欢奶油太重的面包,然后我就说不如做馒头~ 家里的“台台”就大声地说“好哇” . 可能她太想念家乡美食了~ 为了让她满足一下,就决定做馒头!<br />

其实还蛮容易做的~ 一来可以让她高兴高兴,二来我们也有面包类的东西吃啦!<br />

<li><span style="background-color: white; line-height: 20px;"><span style="font-family: Georgia, Times New Roman, serif;">Mix flour, baking powder, yeast, salt and sugar together. Pour in milk (reserve some) and mix into a pliable dough. </span></span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;"><span style="background-color: white; line-height: 20px;">Cover and rest for 3</span><span style="background-color: white; line-height: 20px;">0-40 minutes or until doubled in size.</span></span></li>
<li><span style="background-color: white; line-height: 20px;"><span style="font-family: Georgia, Times New Roman, serif;">Transfer ½ of the rested dough on working surface. Roll out into rectangle shape. </span></span></li>
<li><span style="background-color: white; line-height: 20px;"><span style="font-family: Georgia, Times New Roman, serif;">Brush the surface dough with some water. Gently roll the dough into swiss roll shape.</span></span></li>
<li><span style="background-color: white; line-height: 20px;"><span style="font-family: Georgia, Times New Roman, serif;">Cut into 12-15 pieces and place on lined paper. </span></span></li>
<li><span style="background-color: white; line-height: 20px;"><span style="font-family: Georgia, Times New Roman, serif;">Put the mantou into steamer and rest for 10-15 minutes. Repeat for the other half of the dough.</span></span></li>

<li><span style="font-family: Georgia, 'Times New Roman', serif;">将所有的酱汁材料倒入平底鍋搅拌均匀煮至滚. 把炸好的鸡肉倒入,搅拌均匀. </span></li>

<li><span style="font-family: Georgia, Times New Roman, serif;">面团取出放在撒上少许面粉桌上,排气,将面团分成15份,一个约60g.</span></li>
<li style="margin: 0px 0px 0.25em; padding: 0px;"><span style="font-family: Georgia, Times New Roman, serif;">把面团擀成长长的,打成结,排在烤盘上卷进行最后发酵.</span></li>
<li style="margin: 0px 0px 0.25em; padding: 0px;"><span style="font-family: Georgia, Times New Roman, serif;">发酵完毕,刷上蛋液,撒上<span style="line-height: 16.359375px;">罌粟籽、 南瓜子.</span></span></li>
<li style="margin: 0px 0px 0.25em; padding: 0px;"><span style="font-family: Georgia, Times New Roman, serif;">放入预热180度的烤箱, 烤20分钟或烤至金黄色.</span></li>

<li>将面粉及细糖放到盆中,再将酵母加入面粉中间处。将水慢慢倒入,并搅匀。</li>
<li>用双手揉约5分钟至面团均匀。</li>
<li>用干净的湿毛巾或保鲜膜盖好以防表皮干硬,静置发酵约30分钟。</li>
<li>再将发酵过的面团揉至表面光滑即可,把面团切成每个重约20g 的面球。</li>
<li>将葱花与香油拌匀,再加入肉松拌匀成馅料。</li>
<li>将面球用杆面棍杆成圆形面皮。取约10g 的馅料,放入面皮中,略压成饼型。</li>
<li>取一平底锅,加热后加入约一汤匙的油,放入馅饼,以小火将两面煎至金黄即可。</li>

华人农历新年在这儿都不是很热闹.. 再加上自己在家里“不能出门”,更痛苦的是看到朋友们一个个在面子书“po” 上去的饼干、糕点之类的.. 让我真的心痒痒的想动手做一、两样.. 终于机会来了!! 排骨想要买一些年货送给朋友,于是我就大送殷勤告诉他不如我来做吧!外面的又贵又不好吃.. 而且我会选择容易做的!不用太多的时间!他同意了!那几个礼拜一直上诉,告诉他我已经好了,可以做这个,做那个!他还是不同意!现在批准了,我简直高兴到无法形容!<br />
<br />
我决定做 German cookies.. 但是选择用挤花的方式来做,再加上一小个的曼越莓会比较好看吧~ 不然白白色的送给人好像不好看啦!<br />
<br />
<b>~German Cookies 德国酥饼~</b><br />
<br />
<b><span style="font-family: Georgia, Times New Roman, serif;">Ingredients</span></b><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">125g butter, soften at room temperature</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">40g icing sugar, sifted</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">1 teaspoon vanilla extract (optional)</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">125g potato starch</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">80g cake flour</span><br />
<span style="font-family: Georgia, Times New Roman, serif;">dried cranberry (for decoration)</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<b><span style="font-family: Georgia, Times New Roman, serif;">Method:</span></b><br />
<br />
<ol>
<li><span style="font-family: Georgia, Times New Roman, serif;">In a mixing bowl, beat butter and icing sugar till light and fluffy. Add in vanilla extract (if using) and mix well.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Sift in potato starch and cake flour. With a spatula, mix to form a soft dough. Note: if the mixture appears to be too soft and wet to shape, leave the dough to chill in the fridge for about 10-15mins.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Put the mixture into the piping bag and pipe the shape you like. I used "star" shape to create the flower shape. </span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Decorate middle of the flower with the cranberry.</span></li>
<li><span style="font-family: Georgia, Times New Roman, serif;">Bake in preheated oven at 170 deg C for 15 mins.</span></li>

生活中常常有不愉快的事,有喜、有悲。。或许这就是生活的一部分。<br />
我想在这把16/1/2013的事记下来。。<br />
<br />
我在去年十二月的时候才知道自己怀孕。当得知这消息时,心情既开心又担心。因为这是第一次怀孕,所以心情既兴奋又焦虑。怀孕的期间,没有平安,一直担心这个、担心那个!常常都有祷告,但是心或许没有真正交托。<br />
<br />
在16/1/2013 凌晨2点时,肚子很疼,非常的不舒服。开始觉得有点阵痛,感觉就像要生孩子那样(虽然这是第一胎)。我把排骨吓醒了,我告诉他我肚子很痛,要上厕所。在厕所就上了大号,前后不到一分钟,下体就有东西被推出来了,我知道那是我将要成形的小宝宝。怀孕了十三个星期,前两天还去见医生,一切都还好,可以看到心跳。那时的心情无法形容,我已经猜到我流产了!排骨和我就赶快去急诊室,下体一直流血。我很感激排骨一直陪在我身边。我看到他给我的笑容与鼓励让我更难过,因为我想他一个人在撑着。我感到很愧疚,是不是自己没有好好照顾肚子里的宝宝。为什么会发生这样的事。我真的无法释怀!<br />
<br />
在急诊室的当儿,因为这里的医生与护士都会一直换人。看到我的时候,就会问:Is it your 1st pregnant? 听到后,眼泪就忍不住掉下来。一直都在哭,一直问上帝为什么是我?要我从这件事学习什么功课?我真的无法明白。心情一直不能平静。<br />
<br />
过后,因为怕体内还留着一些他tissues, 医生建议做 D & C手术。我真的很怕,没有任何平安。因为想到要做手术,怕痛!D & C 需要全身麻醉。最后,决定做了这小手术。进到手术室,遇到一个Anaesthetic,不懂他是不是基督徒,问了我:Do you believe God? 我很惊讶,就点头!他接着说:You should have FAITH in Him. Maybe this is the time that the baby need to be taken away, but I am sure He will give you a double blessing. 我的心情突然间变得很平静~ 整个人都放松了!我很感恩那时候上帝派了这个天使提醒我上帝才是掌管生命的主!<br />
<br />
手术很成功!感谢神赐给我一位很好的丈夫,让他无时无刻,无微不至的来照顾我。回到家,看到上帝赐给我的一个经节:我的意念非同你的意念,我的道路非同你的道路-以赛亚书 55:8<br />
<br />
上帝呀!你知道什么是最好的,而且你要引领我走在正确又美好的道路上,为你名的缘故,请你赐给我勇气来依靠你,并且在公义的道路上跟随你!主啊!帮助我和排骨可以一起的面对这件事,让我们学习来信靠你!<br />
<br />
感恩在隔一天,上帝透过灵修再一次安慰我:在世上你们有苦难,但你们可以放心,我已经胜了世界。约翰福音16:33。 上帝如此清晰、温柔的告诉我,当你遇到苦难,我将与你同在,我不会忘记你,不会让你失望,不会让你受伤害;我总不撇下你,也不离开你!<br />
<br />
过后,打了电话给了我的医生。医生告诉我流产的原因可能是50%因为宝宝不健康,25% 可能是not stable, 25% 可能是我自己本身。我很感恩,我想想倘若那时候我的小朋友没事,我可能要面对的事情或许更大。就是如果到时候才发现宝宝是个不健康的话,我的选择该如何?留着这宝宝还是打掉。我觉得这才是我无法承受的!<br />
<br />
可能非基督徒的朋友无法了解,但我相信有一天他们会明白的!当你认识上帝时,你就能明白我为何能够面对并有持着这颗感恩的心。<br />
<br />

沙捞越叻沙是来自沙捞越(有点讲废话哦!)它是用laksa paste, sambal belacan, 鸡骨, 虾壳和椰浆所做的汤底<span style="font-family: Georgia, 'Times New Roman', serif;">. 配料有米粉,芽菜,鸡丝肉,蛋条, 鲜虾,香菜所组成.</span><br />
<span style="font-family: Georgia, 'Times New Roman', serif;">在古晋,你将会吃到不同煮法的laksa,味道也不一样哦.</span><br />
<span style="background-color: white;">家乡出名了一些美食,比如:哥罗面,laksa,kueh chap 等等。我们家的Laksa不像西马的Curry laksa 或 Assam laksa. 我嘛!好奇怪的,在家乡时,都不怎么爱吃. 可能因为不常回家,所以渐渐的爱上这些食物.</span><br />
<br />
这次小组聚会在我家。也因为是冬天,我便建议吃Sarawak laksa. 几个小组员都曾吃过,对“它”简直是念念不忘. 因为他们都不是来自沙捞越的嘛.<br />
因为有20多人,所以我便叫小组员们帮忙预备一些材料. 另一位朋友就帮忙煮一锅汤. Sarawak laksa 最主要的是汤底. 我告诉他如何煮时,反应却是:哇!这么麻烦的?我就对他说:不然,你以为很容易啊?每次大大口吃啊!哈!*对哦!他是从马六甲来的*<br />
<br />
每次做Sarawak laksa 时,一定要打电话问姐姐. 姐就会对我说问妈妈. 到最后,我简直就照着自己的意思去做!<br />
<br />
哈!这次好像有点不够吃,因为太好吃了!*脸红*<br />
当中有我的牧师 (韩国人),他就告诉我说:下次在我家吃,你来煮!*晕*<br />
也有两个从台湾来的朋友,他们都说第一次吃到这么特别的laksa.<br />

我用英文写食谱, 这食谱是10人份. 一包料可以给5-6人份.<br />

<ol>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Prepare 10 bowls of water and cook with chicken frames and few pieces of chicken breast in a stock pot.</span></span></li>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Take out the chicken breast and shredded, put aside. </span></span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;"><span style="background-color: white;">Peel off the prawn shells and pan fried till dry and </span><span style="background-color: white;">fragrant</span><span style="background-color: white;">. </span>Added the cooked prawn shells in the stock pot to enhance extra flavour and boil.</span></li>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Add 2 packets of the Laksa paste (300gm) to the chicken stock and boil on medium heat for 1-2 hours. Filter and discard solids.</span></span></li>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Prepare 2 canned of coconut milks and pour into the stock pot and boil.</span></span></li>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Adjust seasoning: salt, a little belacan (shrimp paste) and oyster sauce.</span></span></li>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Mix half tablespoon of sugar with the off-shelled prawns. This is to have a crunchy texture after you boil the prawn. </span></span></li>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Soak the bee hoon and cook till softened. Put aside.</span></span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">Boil the prawn till cooked. Do not over-cooked. </span>
<span style="font-family: Georgia, 'Times New Roman', serif;">Put aside.</span></li>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Prepare the omelette and julienne it. </span></span>
<span style="font-family: Georgia, 'Times New Roman', serif;">Put aside.</span></li>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Finally put some softened bee hoon (rice vermicelli) and ladle laksa gravy into each bowl.</span></span></li>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Garnish with shredded chicken breast, cooked prawns, julienne omelette and bean sprouts.</span></span></li>
<li><span style="background-color: white;"><span style="font-family: Georgia, 'Times New Roman', serif;">Serve hot. Top with mince coriander leaves. Serve with fresh lime and belacan. </span></span></li>

<b>作法:</b><br />
<span style="background-color: white;">1. 材料A放入搅拌缸中,用慢速搅拌成团至7分筋。</span><br />
2. 加入 材料B用慢速搅拌,再转中速搅拌至完全扩展。<br />
<br />
<b>基本发酵:</b><br />
<span style="background-color: white;">3. 将面团放入钢盆中覆盖保鲜膜,基本发酵(约60分钟),中途(约30分钟)将面团做翻折后继续发酵。</span><br />
<br />
<b>分割滚圆、中间发酵:</b><br />

<span style="background-color: white; font-family: Georgia, 'Times New Roman', serif;">3. In a medium bowl, blend well milk, oil, vanilla extract and the 5 egg yolks.</span><br />
<span style="background-color: white; font-family: Georgia, 'Times New Roman', serif;">4. Add the egg yolk mixture to the dry ingredients, and beat it for about two minutes.</span><br />
<span style="background-color: white; font-family: Georgia, 'Times New Roman', serif;">5. Beat the egg whites with cream of tartar on high speed until foamy, then slowly add in sugar and continue to beat until stiff peak form.</span><br />
<span style="background-color: white; font-family: Georgia, 'Times New Roman', serif;">6. Fold the meringue into the yolk mixture in 3 parts. </span><br />
<span style="background-color: white; font-family: Georgia, 'Times New Roman', serif;">7. Spoon into 24 cupcake cups evenly, give them a couple of big taps on the table to break the large air bubbles in the batter for finer texture of the cakes, and bake at 170C for about 20 minutes. Tooth pick test when the cake is done. Remove from the oven, and cool on racks straight up.</span><br />

因为参加了世界宣教大会的关系,我有机会去到台湾!高兴到~ 不懂如何形容。因为常常听到朋友说,哪里有好多小吃和疯狂的逛街。最好的是,书超多的~<br />

这趟去台湾一共10天!最惨的是,台湾是夏天啦,热到我~ 要晕了!流汗流到湿湿粘粘的~<br />
我就用几个posts来介绍我去过的地方!这次去台湾,只待在台北,没有去到台南,因为时间有点赶,又有台风~ 再加上<span style="background-color: white;">大会进行五天,待在台北吃、喝、玩、乐也是五天,不喜欢匆匆忙忙的感觉。所以跟排骨讲下次再去台中、台南!</span><br />

先写几个要点吧<br />

1. 不要在夏天去台湾 (可能很多人都懂吧,只是我没得选,因为大会主办选在夏天嘛)<br />
2. 我没住民宿,选在大会所分配的地方。其实还不错的。我住在剑谭活动中心。<br />
3. 一张捷运卡方便你搭捷运。其实搭德士还蛮便宜的。你可以找那边的人租车,带你去走走!<br />
4. 去之前做一些survey比较好,因为我和排骨完全没去想要到哪去,所以当天才决定。<br />

Place the side with cream filling in the bottom of each cupcake liner, cream-side facing up.</span></div>

<span style="font-family: Georgia, 'Times New Roman', serif;">2. Place chocolate and cocoa in a medium bowl and pour the hot coffee over the mixture. Whisk until smooth and transfer to the refrigerator to cool completely, 20-30 minutes. Whisk flour, sugar, salt and baking soda together in a medium bowl; set aside. Whisk oil, eggs, vanilla, and vinegar into the cooled chocolate mixture until smooth. Add flour mixture and whisk until batter is smooth.</span></div>

我把 <span style="font-family: Georgia, 'Times New Roman', serif;">coconut milk</span> 冷藏, 再打成刨冰. 虽然是冬天,但是吃这个甜点时,一点都不冷!<br />
记得在家乡的时候,特别爱吃这泰式甜点. 但是外面买的,很贵!更气的是,给的rubies 可以算得到,一定少过10粒,而且非常小粒!现在自己会做了,可以吃到够!哈哈!<br />
我也加了<span style="font-family: Georgia, 'Times New Roman', serif;">jackfruits (nangka)</span>,这里只有罐头的!没办法!<br />

<span style="font-family: Georgia, 'Times New Roman', serif;">3. Add one egg at the time and beat until combine.</span><br />

那天做教会茶点还剩下的蓝莓, 一直在想能够做些什么甜品,因为不想浪费嘛!<br />
想想星期六有Junior Youth在我们的家,就翻翻三年前做过的马芬。没想到,还找到叻!<br />

还好,隔天有教会的会议,所以可以当作茶点吃!哈哈哈~ 不然,我真的不懂如何解决~<br />
做好后没时间拍照,所以趁其他人还没吃时,先拍一张!<br />

2 eggs, lightly whisked<br />
220g frozen blueberries, thawed <span style="color: blue;"><em>(I used canned blueberries)</em></span><br />

<strong>Crumble:</strong><br />
115g (3/4 cup) plain flour<br />
90g chilled butter, diced<br />
100g (1/2 cup, firmly packed) brown sugar <span style="color: blue;"><em>(I cut down to 70g)</em></span><br />
50g (1/2 cup) flaked almonds<br />
<br />
1. Preheat oven to 180C.<br />
<br />
2. Lightly brush a 12-hole muffin pan with melted butter.<br />
<br />3. To make crumble topping, place butter and flour in a bowl and, using your fingertips, rub the butter into the flour until the mixture resembles coarse breadcrumbs. Stir in the sugar and almonds.<br />
<br />
4. Place flour and sugar in a large bowl. Add butter, milk and eggs, and stir until well combined.<br />
<br />
5. Spoon mixture evenly into the muffin pan. Divide blueberries evenly over the mixture. Sprinkle crumble mixture over. Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean. Cool in pan for 15 minutes. Remove muffins from pan.<br />
<br /><strong>NOTES:</strong><br />

<li>You can serve the muffin with custard</li>
<li>Once muffins have cooled, they can be wrapped in plastic wrap and placed in airtight container and frozen for up to four months. Thaw on kitchen bench overnight. Warm in microwave on High/ 800 watts/ 100%, checking every 30seconds until warmed through. </li>
